How to Store Microgreens So They Stay Fresh for a Week

Fresh microgreens can last 5 to 7 days in your fridge — but only if you store them right. A few small habits make a big difference, especially with Bengaluru's humid monsoon months.
1. Refrigerate as soon as they arrive
Microgreens are happiest at 2–5°C. Put them in the fridge the moment your delivery reaches you. Avoid leaving the box on the counter, even for an hour on a warm afternoon.
2. Don't wash them until you eat them
This is the most common mistake. Moisture is the enemy of microgreens — wet leaves turn slimy within a day or two. Store them dry, and rinse only the portion you're about to use.
3. Use the paper-towel trick
Line an airtight glass or plastic container with a dry paper towel, place the microgreens loosely on top, and cover with another sheet. The paper absorbs extra moisture. Change it if it gets damp.
4. Keep them away from the coldest spot
The back of the fridge or the area near the freezer can get cold enough to damage leaves. The middle shelf or crisper drawer works best.
5. Don't pack them tight
Microgreens need a little air. Squashing them causes bruising, and bruised leaves spoil faster.
Handling Bengaluru's humidity
During the monsoon (roughly June to October), humidity rises and condensation builds up inside containers faster. A few extra tips:
- Check the paper towel every day or two and replace it if damp.
- Wipe off any water droplets on the lid.
- Open the fridge less often — every opening lets in warm, humid air.
How to tell if they've gone bad
Fresh microgreens are bright, upright and crisp. Throw them away if you notice sliminess, a sour smell, or dark, mushy leaves. A slightly wilted leaf here and there is fine — just pick it out.
Revive slightly wilted greens
If your greens look a bit tired, dip them in ice-cold water for 5 minutes, then pat completely dry. They'll often perk right back up.
The best tip of all: buy fresh, buy small
Microgreens harvested the morning of delivery last much longer than ones that have sat in a supermarket for days. Ordering smaller amounts more often — like a weekly box — means you always have crisp greens.
